Indonesian Port – Wayang; the name of the Indonesian restaurant Wayang is derived from Indonesian shadow puppetry. Wayang kulit is a puppet used to cast shadows during the battle of good and evil in the puppet play, according to Hindu mythology. The head chef and owner of Wayang is Ada Marselina, who was born in Indonesia, but is based in Rijeka. She uses traditional recipes to prepare the dishes, some of which have roots in street food culture, while the spices are supplied from Indonesia. The food owes its traditional hot and spicy flavour to chili peppers, turmeric, galangal, ginger, coriander, lemongrass, nutmeg…
